<p>It is important to be aware of just how harmful being overweight or obese is to your health.  Many serious health conditions are caused as a result of excess weight.</p>
<p>If you are overweight, then finding an easy weight loss program that suits you is probably high on your agenda.  Many programs do work very well, although a great deal depends on the user and their doctor.</p>
<p>There is a wealth of information about easy weight loss methods on the Internet but how many pounds are lost will depend a great deal on the attitude of the user.  The reason you want to lose weight is paramount in how successful you will be.  If you want to lose because you wish to be healthy, then you are more likely to succeed than if you are doing it for someone else&#8217;s benefit.</p>
<p>Weight loss programs that are effective require that certain facts be taken into consideration.  As an example, the times that you eat during the day, what you eat, how often you eat and whether you get any exercise at all are some of the things that need to be considered.</p>
<p>Some people feel that losing weight rapidly is the best way.  However, this can often cause other medical problems, such as, heartburn or anemia, to occur.</p>
<p>To keep things simple, it is easier to consider that one pound lost per week is realistically the equivalent of about 3,500 calories.  This breaks down to losing 500 calories a day, every day, whether through dieting, exercise or both.</p>
<p>Too many people are consuming large amounts of unhealthy food because they enjoy eating.  However, there is no need to force-feed yourself just because you enjoy particular foods.</p>
<p>How we feel is also a determining factor in our success.  People who are depressed or are not happy about their lives usually eat too much.</p>
<p>These poor eating habits have raised serious concerns within the medical community as the number of people developing type 2 diabetes, cancer and heart conditions increases.  One of the first steps in easy weight loss is assessing why the person is actually eating the amount they do.  This can be the key to long term weight management.</p>
<p>One aspect that also needs to be included is how the person pursues the subject of their weight loss program.  Those who have a more relaxed approach are usually more successful.  The one thing that has shown to be true no matter what you do in life is that being positive about something is more likely to make it happen.</p>
<p>Most people who have maintained their weight loss have found themselves with more energy.  They find that they actually like themselves more because they have achieved something special.</p>
<p>An effective and easy weight loss program will take many things into account.  It will be different for every person, but once the changes can be seen and felt by that person, it becomes easier to achieve.</p>

<p>It isn&#8217;t so. It is time for minerals to take a bow. They make for chip-on-the-shoulder vitality too.</p>
<p>Without minerals you wouldn&#8217;t be able to think, you wouldn&#8217;t be red-blooded, you couldn&#8217;t lift a finger—in fact, you wouldn&#8217;t be. Yet, if you were properly incinerated and could have a good look at your personal minerals, you would be pretty disappointed. They would look like six or seven pounds of fine ash out of the fireplace.</p>
<p>But the things this handful of dust does for you!<br />
In the interesting, not to say spectacular event that your living heart were removed from your breast, it would swell up and stop if dropped into pure water.</p>
<p> If a little common salt were added to the water the heart would beat happily for some time. A pinch of potassium would give it another lift when it ran down. Finally, a little calcium would keep it ticking for days. Not even the vitamins can do a job like that. In fact, the famous Carrel chicken heart that has been kept alive for a quarter of a century owes its existence to a nutritive solution that was devised long before most of our vitamins had been established.</p>
<p>A large proportion of your mineral salts break up in solution and go wandering around your fluids as ions, which are lonely atoms carrying either a positive or a negative electrical charge. In this capacity they act as electrolytes—conductors of electricity—just as ions do in a storage battery, which would be dead if it contained nothing but absolutely pure water. Your nerves and body cells have vital electrical activities that depend on minerals to keep the circuits active.</p>
<p>Moreover, positive and negative ions are constantly being joined in matrimony and this helps to maintain your alkaline reserve—ions which would otherwise form undesirable acid products are tamed by marriage and hustled out of the body.<br />
Then there&#8217;s osmosis. </p>
<p>This is one of the best things you do. You can exert an osmotic pressure up to 350 pounds per square inch, substantially more than you exert on a lawnmower. What osmosis amounts to is this: it is the force that causes body fluids of high water concentration to percolate right through intervening membranes into regions where the water concentration is lower—that is, containing more dissolved minerals and other substances.</p>
<p> Thus one job of minerals is to keep you from being dissolved to death by preserving the balance between cell and circulatory fluids.</p>
<p>This isn&#8217;t a perfect balance, and a lucky thing it is, too. If it were, the food elements in your bloodstream would be deposited on the doorsteps of hungry cells but they<br />

<p>Of all the minerals, calcium and phosphorus are of greatest practical importance because they are needed in considerable amounts and it is quite probable that the average diet does not supply them adequately—particularly calcium.</p>
<p>Bones and teeth need calcium; if we weren&#8217;t all bone-heads our brains would be exposed to contemptuous public gaze. But some of its other functions are more spectacular.</p>
<p>Uncontrollable muscular twitchings, spasms, and even convulsions follow when calcium in the blood drops below normal. It is a powerful regulator of the ability of muscles to contract, and therefore important to your heart, which is just a hollow muscle. The pretty rhythm of its beat would become erratic or stop if there weren&#8217;t a tiny amount of calcium in your blood.</p>
<p>If your paring knife slips and you peel your finger instead of the potato, it is calcium that helps the blood to coagulate and plug up the injury. It calms your nerves too. It is a great pacifier, assisting nerve impulses to fly through the body with the greatest of ease. </p>

It should always be remembered, however, that if you are getting all the vitamins you can use, additional vitamins will simply be excreted and wasted.</p>
<p>As long as you get sufficient vitamins, there is no need to exclude from your diet other foods that may be poor in vitamins; such foods may provide innumerable other valuable elements. The vitamin content of some foods often varies according to growing conditions, season of the year, and other factors..</p>
<p>Now you see how easy it is to be sure you are getting your vitamins. A cup of orange juice a day for Vitamin C, a pork chop for Vitamin Bi, a serving of greens for Vitamin A, a bit of liver for riboflavin—any one of these will assure you of your basic intake of these particular vitamins.<br />
Yet the only vitamins that really go to work for you are those that reach the platter through the kindness of the cook. Sunshine travels some 90,000,000 miles to make plant growth possible. Animals work industriously to store vitamins in meat and dairy products. And then, a dozen feet from the dining-room table, enormous quantities of vitamins come to an untimely end on the kitchen stove. Many of them are carried of in steam from over boiled foods so that, in theory, it would be possible to scrape a square meal off the ceiling of an old kitchen.</p>
<p>There is nothing complicated about preserving vitamins in cooking. A basic principle is simplicity. Fancy victuals that go through several cooking processes before they reach the table (even so common a procedure as boiling potatoes and then frying them) lose some of their vitamins in each operation.</p>
<p>Here are simple rules for preserving vitamins in your food:<br />
Use a minimum amount of cooking water.<br />
Cook in covered vessels for as short a time as possible.<br />
Avoid stirring.<br />
Never add baking soda.<br />
Start vegetables in hot water.<br />
Serve the cooking liquids in soups.<br />
Handle fruits and vegetables as little as possible.<br />
Use a brush to clean vegetables rather than a knife to scrape them.<br />
Cook in their natural state (i.e., potatoes in jackets)<br />
as far as practicable.</p>
<p>Some vitamins are more temperamental than others. Vitamin C is the flightiest prima donna of the lot. It runs off and dissolves itself in cooking liquids when it gets<br />
a chance. It is a heat-hater with a tender skin and it resents rough handling. Shredding, cutting, and dicing of fruits and vegetables can result in severe losses of Vitamin C. To preserve it, conduct these manipulations just before serving.</p>

<p>Yes, as far as certain vitamins are concerned. But food supplies a great many other essentials than vitamins, and also supplies you with vitamins that have not yet been discovered and hence can&#8217;t be packaged in cellophane.</p>
<p>Fortified bread is no more costly than ordinary white bread, so, in effect you receive free vitamins. Fortified breakfast cereals are better values than the super-refined kinds; whole-grain cereals even better in some respects. More and more, the grocery shelves are offering vitamin-enriched foods which are excellent v values. But one should not be tempted to purchase inferior kinds of food simply because they claim to be &#8220;vitaminized.&#8221; It will pay you to get the habit of checking the labels of fortified foods to see how many vitamin units they deliver in measured quantities.<br />
If your doctor recommends synthetic vitamins for you, study the labels on the bottles. Check the units of various vitamins furnished by a measured dose, as stated on the label. </p>
<p>Certain vitamins, such as A and D, are relatively cheap. Those of the B complex are likely to be expensive. So-called &#8220;shotgun&#8221; mixtures—preparations which contain a number of different vitamins—may contain certain ones in liberal quantity while others are too scanty to be of much significance. Check your needs against the promises made on the labels.</p>
<p>For the ordinary person, able to sit up and take nourishment, it is practically always possible to obtain all necessary vitamins from food alone—and that without adding a cent to your grocery bill. That one doesn&#8217;t usually get necessary vitamins by wise food-shopping is an unhappy truth.</p>
<p>The wealthy are just as likely to suffer vitamin deficiencies as the poor. Rich, expensive foods are more likely to be vitamin-poor than the simple, common ones. The reason why many of us are vitamin starved—you have the word of scores of investigators and dozens of countrywide surveys for that—is simply that we don&#8217;t know how to spend our food dollars for greatest value. For the same amount of money, certain foods will supply three times as much Vitamin A as others.</p>
<p>Whenever possible, buy vitamin-fortified foods, as long as they cost no more. </p>

			<content:encoded><![CDATA[<p>Stop the presses! Sizzling right out of a dozen laboratories has come the news-flash that lack of certain vitamins causes hair to turn gray and that these same vitamins can restore its color.</p>
<p>It is such a brand new discovery that it is not yet positive how these beauty vitamins affect human beings. In the usual course of nutrition research, discoveries are first tested on animals and then applied to man. Already the anti-gray hair vitamins have proved their potency in restoring color to the graying fur of foxes, dogs and rats. The next step is to try them on human beings.</p>
<p>No scientist will at this writing promise that vitamins will bring back the color to your gray hair or prevent its turning gray. They merely say they don&#8217;t know. Nevertheless, though cagily noncommittal in public, scientists shed their caution when they&#8217;re alone among their test tubes. Plenty of scientists are gray-haired, if not venerable, and a number of them are human enough to have taken their own gray hair medicine. Scattered reports have drifted out of the cloisters indicating that certain vitamin concentrates have succeeded in darkening the color of prematurely graying human hair.</p>
<p>There is still some dissension as to the exact vitamin that works these miracles, but it is certain that it is one or perhaps several factors of the miraculous B complex. The important thing is that, even though not specifically identified, the food sources of the factor are well known and easily available to anyone.</p>
<p>One of the first reports on the gray hair vitamins came out of the laboratories of Dr. Agnes Fay Morgan of the University of California just a few months ago. A strain of black-coated rats was fed a diet that included liberal amounts of four purified B vitamins: thiamin, riboflavin, nicotinic acid, and pyridoxine. In six to eight weeks the black hair of the rats began to turn gray. They ceased to grow and died within six to eight months. Their personal appearance was most unhappy; they looked like emaciated centenarians with loose, baggy skin and sparse gray hair.<br />
This was exciting to all concerned except the rats. The animals didn&#8217;t know what they were missing and neither did the scientists, but obviously it wasn&#8217;t the four B vitamins. These had been obtained in the customary way by shaking water solutions of yeast, liver or rice bran with Fuller&#8217;s earth.</p>
<p>The filtrate that remained after this process of separation obviously contained another vitamin or vitamins. This was satisfactorily proved when the rats showed immediate improvement and were quickly restored to full health by feeding concentrated extracts of the filtrate factor. Miraculously, the gray patches in their fur grew out with normal black color.</p>
<p>A six-week-old cocker spaniel with long, coal black, curly hair was put on a filtrate-deficient diet. Soon his hair lost pigment at the roots and within three months his coat was gray. Fed a filtrate made from yeast, his coat, too, resumed its glossy black hue.<br />
Piebald rats in the care of Dr. Conrad Elvehjem of the University of Wisconsin turned gray on certain diets. He succeeded in restoring normal hair color by feeding them liver extract. A similar observation and cure was reported by Dr. Gulbrand Lunde and Dr. Hans Kringstad, two Norwegians who are credited with the first report on the antigray hair vitamin. In still another experiment, black-haired rats fed on a milk diet became anemic and their hair turned a silvery gray. In this case the color was restored by adding iron and copper to the diet.</p>
<p>Many investigators believe that pantothenic acid, one of the newer B vitamins, is the essential factor in preventing and restoring gray hair. Concentrated dosage of pure pantothenic acid has cured gray-haired rats; other investigators have failed to restore hair color with pantothenic acid alone. Dr. Morgan is convinced that pantothenic acid is concerned in the phenomenon of graying hair but that other factors are probably important also.</p>
<p>That one, perhaps the most essential, of these factors is a well-known chemical out of which novocain is made is indicated by the work of Dr. S. Ansbacher of the Squibb Institute for Medical Research. The substance, a B vitamin bearing the formidable name of para-aminobenzoic acid, has restored hair color to rats where pantothenic acid alone has failed.</p>
<p>So as you can see vitamins in your diet is very important.</p>

Vitamin Bi is an acidulous little fellow who resents going on the alkaline side; so does Vitamin C. The addition of baking soda to cooking water, as is &#8216; frequently done to preserve the green color of vegetables, causes these vitamins to go to pieces.</p>
<p>Vitamin A can take most anything except long continued high temperatures. Ordinary cooking procedures do hot affect it much, but oxygen will hasten its breakdown, as it will for other vitamins, and therefore closed vessels are advised for cooking when they are practicable. Vitamin G (riboflavin) is water soluble but reasonably immune to cooking losses. Vitamin D can be more or less ignored by the cook.</p>
<p>An ancient and unhonorable superstition holds that commercial canning processes wreak havoc with the vitamins in food. Whatever may have been the case fifty years ago, it just isn&#8217;t true today.</p>
<p>Foods from modern canning plants, processed in airtight vessels to minimize vitamin destruction, not only compare favorably with fresh foods but also in some cases may even be superior in vitamins. Fresh produce bought in open markets during hot weather, for instance, is likely to contain less Vitamin C than foods rushed from the fields to the canning factories. Of course a careless cook can destroy canned vitamins as well as fresh ones.</p>
<p>Innumerable laboratory checkups disclose that canned foods have practically the same Vitamin A value as the corresponding fresh foods. Vitamin B1 is well preserved. There is a slight sacrifice of Vitamin C, although foods of an acid nature, such as tomatoes, grapefruit, orange and grapefruit juice, when canned by modern methods, are nearly as rich in Vitamin C as fresh foods available in city markets. </p>
<p>There is a strain of frigidity running through the vitamins. They don&#8217;t resent being chilled and wrapped in cartons that come to us as quick-frozen foods. But they are a little nervous and eager to escape when the package thaws. You&#8217;d feel the same way about it if you were kept below zero for a few days.</p>

<p>Don&#8217;t allow frozen food to kibitz in the kitchen until it is completely defrosted—unless, of course, you are serving it raw. Store the package in the coldest compartment of your refrigerator and when you are ready to cook it, plunge it immediately into boiling water.</p>
